A special thank you to all the volunteers who helped out 
with our 2006 Annual Celiac Walk! Despite the inclement 
weather, we were still able to send $17,000.00 to the 
University of Maryland. As always, we appreciate your 
participation in this worthwhile event.

The WNY Gluten Free Diet Support Group, Inc. normally meets 
one Saturday per month @ 10:00 a.m. at Mt. Mercy Academy 
(MMA) in the cafeteria @ 8 Red Jacket Pkwy, just off 
Abbott Rd Near South Buffalo’s Mercy Hospital. Meetings 
always include special counseling and a grocery bag of 
gluten-free items (courtesy of Wegmans) for the newly 
diagnosed. 
 
Note that special time is set aside at support meetings 
for the newly diagnosed to provide assistance and answer 
their questions about celiac disease and the gluten free 
diet. 
 
 
July 29, 2006 New patient meeting. 
 
August 5, 2006 We will have a representative at the 7th 
Annual Family Health Fair at the Amherst Senior Center from 
9:00am to 12:30pm  
 
August 13, 2006 Dinner at Golden Duck, Williamsville. See

September 9, 2006 “Celiac Basics for Kids” - Panel of 
parents will present helpful information for children with 
Celiac Disease. Meeting to be held at 10:00am with Taco 
Luncheon to follow. Suggested donation for adults $6.00, 
children 10 and under $4.00.  
 
September 17, 2006 Dinner at Roycroft Inn, East Aurora.

October 7, 2006 Fred Torell (Sous Chef—Amherst St. 
Wegman’s) and Jennifer Campagnolo (Manager of Nature’s 
Market Place—Alberta Dr. Wegman’s) from Wegman’s will do a 
GF cooking demonstration.  
 
November 18, 2006 Annual baked goods auction. Meeting will 
be held at the Lancaster Village Municipal Building 
(Broadway at Central Avenue, Lancaster) 
 
December 3, 2006 Our annual Holiday Luncheon will be held 
at the Rich Renaissance on Sunday, December 3rd. Watch fur 
further details.

Celiac Disease Center at Columbia Hosts the XII 
International Celiac Disease Symposium 2006 
November 9-11, 2006

Celiac Disease will take center stage in New York City as 
the Celiac Disease Center at Columbia University hosts the 
XII International Celiac Disease Symposium 2006, which will 
bring an unprecedented opportunity for each of your to help 
shape the future of Celiac Disease by participating in the 
symposium, November 9-11, 2006 at the Hilton NY Hotel, New 
York City. 
 
The symposium is expected to attract healthcare industry 
leaders, clinicians, nutritionists, diagnostic and 
pharmaceutical executives, scientists, policy makers, 
patients and journalists and will touch on every aspect of 
adult and pediatric Celiac Disease—diagnosis, treatment, 
business development, science and public policy. 
 
To ensure that symposium registrants gain as much 
applicable information to their specific needs as possible, 
two separate tracks will run simultaneously throughout the 
symposium—one for scientists, the other for patients, 
nutritionists and other healthcare professionals. 
 
This symposium has emerged as the single most important 
forum for bringing together the world leaders who will 
determine the nature of Celiac Disease and its impact on 
patients around the globe.

July 2005—June 2006 
 
Education Committee Summary 
This committee headed by Elaine Rothfus with the assistance 
of Cliff Hauck and Pat Blackett had an extremely busy year. 
Cliff spearheaded a joint effort with the local GIG group 
to bring internationally known author, dietician and expert 
on Celiac Disease to Buffalo in order to present two 
workshops. One for health professionals for credit and one 
for Celiacs. Out of these workshops came a locally 
published booklet prepared by two interns with the US FDA.  
It is called “Introduction to living Gluten Free in WNY”.  
It is available to our members and will be offered to local 
physicians’ offices  
 
We were represented at 3 local health fairs, and Cliff and 
Pat did informational presentations at 2 local health food 
stores. 
 
Program Committee Summary 
Program Chair Elaine Rothfus organized many excellent 
information programs this year. Experts spoke on: chronic 
illness, ibs and CD; T cells and TTG; the role of genetics 
and CD; USFDA representative spoke on the new labeling laws 
for Celiacs; a pharmacist kept us up-to-date on GF meds and 
nutritional supplements; there was an expert presentation 
on osteoporosis and one of nutrition for Celiacs. A 
November auction, December holiday luncheon, summer picnic 
and a pancake breakfast completed our year. 
 
Special Events Summary 
Special event Dinners remain one of the most effective and 
popular routes to achieving two important objects: 1) 
enhancing education and awareness of “gluten-free” among 
restaurants and 2) enhancing the knowledge and confidence 
among the newly diagnosed celiacs about “eating out” gluten 
free. 
 
During this 12-month period, five (5) dinner event were 
attended by nearly 250 people. Thai, Italian, Chinese and 
contemporary American establishments (including Wegman’s) 
have been included to demonstrate that a wide variety of 
delicious cuisine can be prepared gluten-free. Usually 
these eating establishments make our published list of 
“celiac-friendly” restaurants.  
 
Combined food and fund raisers are also popular with our 
members. Pancake breakfasts and auction of member-baked 
goods are always a hit!  
 
Miscellaneous 
Marilyn and Cliff Hauck represented us at the annual 
CSA/USA Conference. Cliff has accepted the appointment as 
Region III representative. His area covers all of New 
England, New York and New Jersey.  
 
Another successful “walk” was held in May despite the 
inclement weather. We were able to send $17,000.00 to the 
University of Maryland.  
 
Member, Cathy Austin, held several successful GF cooking 
classes at Martins. 
 
Paula McGirr continued to receive high praise for the 
maintenance of our website. 
 
New treasurer, John Nettina, filed our first multi-page NYS 
and US tax form since we became a not-for-profit 
organization.

first and only authoritative guide to this serious 
autoimmune disease. As co-author Dr. Peter Green explains 
"celiac disease has been dubbed the 'great pretender.' Its 
symptoms can easily masquerade as a number of other 
illnesses...and it is those conditions that are often 
diagnosed instead of celiac disease. The one thing most

GLUTEN-FREE RECIPE CORNER 
Bored with Meatloaf? 
Try these ideas with your basic recipe for a more ethnic 
flare: 
CARIBBEAN: Add diced salt pork and green onions. Also, 
try ginger, green pepper and curry powder. 
CHINESE: Add rice, water chestnuts and sweet-and-sour 
sauce. Or GF soy sauce, green onions and ginger. 
FRENCH: Mix in mushrooms, red wine and pepper. Also, try 
white wine, Dijon mustard and parsley. 
GREEK: Add ground lamb and feta cheese. 
INDIAN: Add curry powder and crushed garbanzo beans. Or 
add cubed potatoes, GF yogurt and mustard seeds. 
ITALIAN: Add oregano, marjoram and parmesan cheese. Or mix 
in cooked spinach, nutmeg and garlic. Also try fennel 
seeds and chopped GF Italian sausage. 
MEXICAN: Add fresh cilantro and green chilies. Or add 
white cheese, chili powder and cumin. 
POLISH: Add bacon drippings, dill pickles and hard-boiled 
eggs. Or add horseradish and GF sour cream. 
PUERTO RICAN: Add sliced green olives, ham and raisins.  
Or mix in onions, garlic and chopped green bell pepper.
